Chouquette is a small French pastry sprinkled with coarse or pearl sugar. It is eaten plain or with ice cream. Make sure to leave ample distance between the pastries the baking tray; if you don't have two trays, bake on tray after the other.

Makes: 50 chouquettes environ
100g butter, diced
20g caster sugar
2 pinches salt
150g plain flour
coarse sugar or pearl sugar

Preheat oven to 180 C / Gas 4. Line a baking tray with greaseproof paper.
Add water to a saucepan and bring to the boil. Add butter, sugar and salt and stir well till butter has dissolved. Add all the flour at once and whisk vigorously till smooth. Remove from the hob.
Add eggs, one after the other, and beat till smooth.
Spoon smalll heaps of the mixture onto the prepared baking tray. leaving ample distance between them so they can spread. Sprinkle each with coarse sugar.
Bake in the preheated oven till golden, about 20 to 30 minutes depending on size. Remove from the oven and let cool.
