This is a deluxe version of French toast: two slices of French toast stacked like sandwich and filled with mascarpone and strawberries. This is my mother's recipe; she always used stale brioche, which is especially good for French toast.

50g mascarpone, at room temperature
2 teaspoons vanilla sugar
8 to 10 thick slices white bread or stale brioche
1 tablespoon orange flower water
40g caster sugar
1 knob butter for frying
9 to 11 fresh strawberries, hulled and sliced
whipped cream (optional)
chocolate shavings (optional)

In a small bowl stir mascarpone with vanilla sugar till smooth. Set to one side.
In a large shallow plate beat eggs and milk, then stir in orange flower water and sugar.
Preheat your oven to 180 C / Gas 4.
Heat butter in a non stick frying pan. Dip bread slices in the egg mixture and fry on both sides till nicely browed, about two minutes on each side.
Transfer the finished slices on a plate lined with kitchen paper. Spread some mascarpone mixture on each slice and top with sliced strawberries, about 2 strawberries for each. Top with a second slice.
Bake in the preheated oven for 10 minutes. Serve with whipped cream and chocolate shavings if desired.
