New Orleans style bread pudding

    This bread pudding is a speciality of New Orleans, and it's traditionally served with bourbon-flavoured custard.

    Serves: 12 

    • 15g butter, softened
    • 500ml double cream
    • 1L milk
    • 8 eggs
    • 275g light brown soft sugar
    • 1 tablespoon vanilla extract
    • 1 1/2 teaspoons cinnamon
    • 1/2 teaspoon ground nutmeg
    • 800g stale white bread, cubed
    • 100g raisins
    • 1 cooking apple, peeled, cored and diced
    • bourbon-flavoured custard to serve (see footnote)

    1. Generously butter a baking dish.
    2. In a large bowl add cream, milk, eggs, sugar, vanilla, cinnamon and nutmeg. Whisk till well combined.
    3. Scatter half of the bread in the prepared dish and cover with half of the raisins und apple. Pour 1/2 of the egg mixture on top.
    4. Cover with the remaining bread, raisins and apple and pour the remaining egg mixture on top. Leave to stand at room temperature for 45 minutes to 1 hour so the bread can soak up all the liquid.
    5. Preheat oven to 180 C / Gas 4.
    6. Bake till the pudding is well set in the centre, about 85 minutes. Let it rest about 15 minutes before serving.
