Marinated courgettes

    Soaking the courgettes in salted water helps them keeps their crunch. Select medium size courgette without large seeds.

    Serves: 6 

    • 1kg medium size courgettes, green or yellow
    • 2 teaspoons salt
    • 200ml vegetable oil
    • 6 tablespoons white wine vinegar
    • 2 tablespoons honey
    • 1 bunch parsley or dill, minced
    • 8 garlic cloves, sliced thinly
    • 1 to 2 pinches cayenne pepper (optional)

    1. Cut courgettes and place them in a saucepan.
    2. Add 1/2 teaspoon salt and mix well.
    3. Cover with boiling water and let cool. Drain.
    4. Repeat this 3 more times.
    5. In a bowl stir oil, vinegar, honey, herbs and garlic.
    6. Toss the drained courgettes with the marinade and add cayenne pepper if desired. Cover and refrigerate overnight.
