Pumpkin, coconut and pecan loaf cake

    An easy pumpkin, desiccated coconut and pecan nut loaf cake that's lovely to make when pumpkins are in season.

    Makes: 1 loaf cake

    • 125g caster sugar
    • 110g soft brown sugar
    • 120ml sunflower oil
    • 2 eggs, beaten
    • 200g pumpkin puree
    • 225g self-raising flour
    • 1 teaspoon salt
    • 2 teaspoons mixed spice
    • 75ml water
    • 35g desiccated coconut
    • 50g chopped pecans

    1. Preheat oven to 180 C / Gas 6. Grease and flour a loaf tin.
    2. Mix caster sugar, soft brown sugar, oil and eggs together in a bowl until creamy; stir in pumpkin puree. Add flour, salt, mixed spice and water until just combined; fold in desiccated coconut and chopped pecan nuts.
    3. Spoon mixture into prepared loaf cake tin; bake in preheated oven for 1 hour or until a skewer inserted in the middle of the cake comes out clean.
