Chicory, cheese and ham pies

    These are tasty chicory, cheese and ham puff pastry pies that are simply delicious served with a green salad.

    Serves: 4 

    • 4 yellow chicory, trimmed and cored
    • 4 slices mature Cheddar cheese
    • 4 slices of cooked ham
    • 1 (320g) sheet puff pastry
    • 1 egg, beaten

    1. Roll pastry out on a floured surface; slice into 4 equal pieces.
    2. Wrap a slice of cheese around each chicory bulb; wrap a slice of cooked ham over the cheese. Place chicory in a piece of pastry; fold over to enclose, pressing down the edges and sealing with water.
    3. Brush each pastry parcel with beaten egg; chill in fridge for 30 minutes.
    4. Preheat oven to 200 C / Gas 6; lightly grease a baking tray and arrange parcels on the tray. Brush with egg again, if needed.
    5. Bake puff pastry parcels in preheated oven until golden brown, about 325 to 30 minutes.
