Green asparagus with curry sauce

    This is a simple recipe for a delicious side dish of crisp green asparagus topped with a curry sauce. Perfect for serving with breaded chicken or pork chops.

    Serves: 4 

    • 1 bunch of green asparagus, trimmed
    • 25g butter
    • 25g flour
    • 1 tablespoon curry powder
    • 250ml semi-skimmed milk
    • 1/2 stock cube, crumbled

    1. Boil asparagus in a pan with plenty of water for about 10 minutes, or until just cooked but still have a bite; drain and keep warm.
    2. Melt butter in a pan over low heat; stir in flour and curry powder until combined. Pour in the milk, a little at a time, stirring continuously, until you get a smooth sauce. Crumble the stock cube into the sauce and stir to combine; simmer for 1 or 2 more minutes, or until sauce has thickened.
    3. Pour sauce over warm asparagus; serve.
