Curried celery and potato soup

    Depending on the type of curry you use, this can be a mildly spiced or spicy soup.

    Ingredients
    Serves: 4 

    • 2 tablespoons olive oil
    • 1 onion, minced
    • 1 leek, thinly sliced
    • 6 stalks celery, minced
    • 1 tablespoon curry powder
    • 2 medium potatoes, peeled and diced
    • 900ml vegetable stock
    • 1 bay leaf
    • 1 teaspoon dried thyme
    • 1 1/2 teaspoons dried parsley
    • 2 tablespoons minced fresh herbs
    • salt and pepper

    Method

    1. Heat olive oil in a large pot. Add onion, leek and celery and fry till soft, about 10 minutes, stirring often. Add curry and cook for 2 further minutes.
    2. Add potatoes, stock and dried herbs. Cover and simmer for 20 minutes. Puree soup till smooth.
    3. Add fresh herbs and puree again briefly. Season with salt and pepper.
