Depending on the type of curry you use, this can be a mildly spiced or spicy soup.

Ingredients
Serves: 4
2 tablespoons olive oil
1 onion, minced
1 leek, thinly sliced
6 stalks celery, minced
1 tablespoon curry powder
2 medium potatoes, peeled and diced
900ml vegetable stock
1 bay leaf
1 teaspoon dried thyme
1 1/2 teaspoons dried parsley
2 tablespoons minced fresh herbs
salt and pepper

Heat olive oil in a large pot. Add onion, leek and celery and fry till soft, about 10 minutes, stirring often. Add curry and cook for 2 further minutes.
Add potatoes, stock and dried herbs. Cover and simmer for 20 minutes. Puree soup till smooth.
Add fresh herbs and puree again briefly. Season with salt and pepper.
