Chocolate banana oat cake

    If you crave banana chocolate cake but are also mindful of eating enough fibre, this is a perfect recipe for you. The cake is especially good lukewarm with a scoop of vanilla ice cream.

    Serves: 8 

    • 110g light soft brown sugar
    • 50g butter or margarine
    • 2 eggs, lightly beaten
    • 3 ripe bananas, mashed
    • 1 teaspoon vanilla extract
    • 125g plain flour
    • 50g porridge oats
    • 1 teaspoon bicarbonate of soda
    • 30g unsweetened baking cocoa
    • 115g chocolate chips

    1. Preheat oven to 180 C / Gas 4. Grease a loaf tin.
    2. In a large bowl beat and butter till creamy. Add eggs, bananas and vanilla and beat till smooth. In another bowl combine all the dry ingredients. Slowly add the dry ingredients to the wet ingredients. Fold in the chocolate chips.
    3. Tip into the loaf tin and bake in the preheated oven till a tester comes out clean, about 1 hour.
