Ham and Cheddar Pan Toasties

    This is the perfect midweek supper fix. Instead of using a toastie maker, the toasties are dipped in egg and pan fried. Comforting, quick and delicious!

    Ingredients
    Serves: 2 

    • 2 eggs
    • 3 tablespoons Worcestershire sauce
    • 1/2 teaspoon hot pepper sauce (e.g. Tabasco)
    • salt and pepper to taste
    • 4 slices white or brown loaf
    • 6 slices cooked ham
    • 75g (3 oz) Cheddar cheese, sliced
    • 1 tablespoon vegetable oil

    Method

    1. In a medium bowl, whisk together eggs, Worcestershire sauce and Tabasco. Season with salt and pepper. Pour mixture into a wide, shallow dish.
    2. Layer 2 slices bread with equal amounts of the sliced ham and cheese; top with remaining bread slices to make sandwiches and press down to secure filling. Dip sandwiches into egg mixture and turn to coat both sides.
    3. Heat the oil in a frying pan over medium heat. Cook sandwiches 3 minutes on each side, or until golden brown and cheese has melted. Serve hot.

    I never manage to cook egg-dipped sandwiches all the way through without burning them, so I made this slightly differently: I dipped the bread in egg, cooked one side in the skillet, removed them and made the sandwich, then returned it to the skillet with the cooked sides facing inwards.     A trick I learned after too many sandwiches turning out raw in the middle? Make your "french toast" first. Cook it until the bread is very lightly browned and remove from skillet. Cool it a little, then top with your ham and cheese and make your sandwich. Then, all you have to do is finish cooking it in the skillet until the cheese is melted.
