Spanish chorizo pasta sauce

About this recipe:
A stunning, mildly spiced smokey chorizo sauce, quick and easy.
1 tbsp extra virgin olive oil
800g passata / tinned tomatoes
4 crushed garlic cloves
2 tsp fresh rosemary, finely chopped
2 tsp caster sugar
225g sliced chorizo sausage
pinch chilli flakes (to taste)
175ml double cream
2 tbsp fresh chopped parsley
500g pasta (any shape)
50g freshly grated parmesan
sea salt and black pepper to taste
- Melt butter in large saucepan. Add tomatoes, garlic and rosemary. Season with desired salt and pepper. Add sugar to heighten sweetness of tomatoes.
- Simmer for 5 minutes then add sliced chorizo, chilli, cream and half the parsley. Simmer until the mixture has reduced by about half, stirring frequently.
- Meanwhile, cook the pasta according to packet instructions.
- Season the sauce to taste and serve with the cooked pasta and garnish with the remaining parsley and parmesan cheese. Fantastic!!
It was really tasty and my son enjoyed it.
