Spanish chorizo pasta sauce

About this recipe: A stunning, mildly spiced smokey chorizo sauce, quick and easy.


Serves: 6 

  • 1 tbsp extra virgin olive oil
  • 800g passata / tinned tomatoes
  • 4 crushed garlic cloves
  • 2 tsp fresh rosemary, finely chopped
  • 2 tsp caster sugar
  • 225g sliced chorizo sausage
  • pinch chilli flakes (to taste)
  • 175ml double cream
  • 2 tbsp fresh chopped parsley
  • 500g pasta (any shape)
  • 50g freshly grated parmesan
  • sea salt and black pepper to taste

Prep:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Melt butter in large saucepan. Add tomatoes, garlic and rosemary. Season with desired salt and pepper. Add sugar to heighten sweetness of tomatoes.
  2. Simmer for 5 minutes then add sliced chorizo, chilli, cream and half the parsley. Simmer until the mixture has reduced by about half, stirring frequently.
  3. Meanwhile, cook the pasta according to packet instructions.
  4. Season the sauce to taste and serve with the cooked pasta and garnish with the remaining parsley and parmesan cheese. Fantastic!!
