    About this recipe: Light and fluffy rock buns, named for their shape NOT texture! For a different taste each time choose different dried fruits.

    Ingredients
    Serves: 12 

    • 225g (8 oz) self raising flour
    • 110g (4 oz) butter (margarine works OK too)
    • 80g (3 oz) demerara sugar
    • 80g (3 oz) sultanas
    • 1 beaten egg
    • 1 tablespoon milk

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Rub butter into flour until like breadcrumbs. Stir in sugar and sultanas and bind the mixture with the beaten egg & milk.
    2. Put lumps of the mixture onto a greased baking tray. You should get between 12 & 16 depending on the size of your lumps.
    3. Bake for 10-15 minutes until golden at 200 C / Gas 6. Cool on a wire tray.

    These went down really well with the children!! This recipie is very much like the one my mother used to use, and makes delicious Rock Buns! We've also added a little mixed spice and/or cinnamon at different times and they are delicious. - 08 Mar 2012
