Healthy and hearty green soup

About this recipe:
Leek, potato, broccoli, courgette and watercress smoothly pureed with stock - no milk or cream unless desired.
1 onion, sliced
3 small leeks, sliced
1 pint veg stock
1 pint chicken stock
3 small potatoes, diced
1 large head of broccoli, roughly chopped
1 courgette, quartered
salt and pepper
cream or alternative to garnish
- Fry sliced onion and leeks in butter or low fat alternative until soft (butter tastes better!). Add stock and diced potatoes and bring to the boil.
- Simmer for 10 minutes then add broccoli (including stalk) and courgette - bring back to the boil and simmer with lid on for 5 minutes or til just tender.
- Add watercress and a little water, if it looks too stodgey. Turn off heat and blend to a smooth consistency.
- Add salt and black pepper and serve with sprig of watercress and swirl of cream or low fat alternative.
