Healthy and hearty green soup

    Leek, potato, broccoli, courgette and watercress smoothly pureed with stock - no milk or cream unless desired.

    Serves: 6 

    • 1 onion, sliced
    • 3 small leeks, sliced
    • 1 pint veg stock
    • 1 pint chicken stock
    • 3 small potatoes, diced
    • watercress
    • 1 large head of broccoli, roughly chopped
    • 1 courgette, quartered
    • salt and pepper
    • cream or alternative to garnish

    1. Fry sliced onion and leeks in butter or low fat alternative until soft (butter tastes better!). Add stock and diced potatoes and bring to the boil.
    2. Simmer for 10 minutes then add broccoli (including stalk) and courgette - bring back to the boil and simmer with lid on for 5 minutes or til just tender.
    3. Add watercress and a little water, if it looks too stodgey. Turn off heat and blend to a smooth consistency.
    4. Add salt and black pepper and serve with sprig of watercress and swirl of cream or low fat alternative.
