Butternut squash, apple and leek soup

    I love the combination of butternut squash, apple and leek in this easy soup. Sometimes, I add red pepper for a different flavour.

    Serves: 8 

    • 1 butternut squash or small pumpkin, peeled and diced
    • 1 potato, peeled and diced
    • 1 apple - peeled, cored and chopped
    • 1 onion, finely sliced
    • 1 leek, washed and sliced into rings
    • 1 carrot, chopped
    • 1 red pepper, finely chopped (optional)
    • 750ml chicken or vegetable stock
    • salt and pepper, to taste
    • creme fraiche, to serve

    1. Place butternut squash, potato, apple, onion, leek, carrot and red pepper in a large soup pot; cover with stock and bring to the boil. Simmer soup for 20 to 25 minutes or until vegetables are soft; puree with an immersion blender.
    2. Season to taste with salt and pepper; serve with a dollop of creme fraiche and a sprinkling of cayenne pepper.
