I love the combination of butternut squash, apple and leek in this easy soup. Sometimes, I add red pepper for a different flavour.

1 butternut squash or small pumpkin, peeled and diced
1 potato, peeled and diced
1 apple - peeled, cored and chopped
1 onion, finely sliced
1 leek, washed and sliced into rings
1 carrot, chopped
1 red pepper, finely chopped (optional)
750ml chicken or vegetable stock
salt and pepper, to taste
creme fraiche, to serve

Place butternut squash, potato, apple, onion, leek, carrot and red pepper in a large soup pot; cover with stock and bring to the boil. Simmer soup for 20 to 25 minutes or until vegetables are soft; puree with an immersion blender.
Season to taste with salt and pepper; serve with a dollop of creme fraiche and a sprinkling of cayenne pepper.
