Slow cooker sausage pasta

    This easy slow cooker pasta dish with fennel-flavoured Italian sausages, black olives, tomatoes and pesto was inspired by Mediterranean cuisine. If you like it spicy, make it with hot salsa.

    Serves: 6 

    • 10 Italian sausages, cut into thick slices
    • 2 to 3 stalks celery, sliced
    • 1 lage onion, minced
    • 1 (290g) jar pitted black olives, drained
    • 2 (250g) shopped tomatoes in juice
    • 1 (300g) jar salsa (hot or mild)
    • 2 garlic cloves, minced
    • 2 teaspoons dried thyme
    • 2 tablespoons prepared basil pesto
    • 1 (340g) packet egg noodles

    1. Place all ingredients except noodes in the slow cooker and hot on HIGH for 3 hours, or on LOW for 6 hours.
    2. At least 20 minutes before the end of the cooking time, add the noodles and water if needed so they are fully immersed. Cook till noodles are soft.
