Coconut and almond biscuits

    These biscuits are flavoured with ground almonds and desiccated coconut. The are very easy to make and very tasty! This recipe makes about 16 biscuits.

    Ingredients
    Makes: 16 biscuits

    • 75g butter, softened
    • 75g caster sugar
    • 1 egg, beaten
    • 75g desiccated coconut
    • 40g ground almonds
    • 125g plain flour
    • 1 teaspoon baking powder
    • 16 almonds (optional)

    Method

    1. Heat the oven to 180 C / Gas 4. Line 2 baking trays with baking paper.
    2. Mix softened butter, sugar and egg in a large bowl; add coconut and ground almonds. Sift in flour and baking powder and mix to combine.
    3. Form 16 balls from the mixture and place them on prepared trays with space in between each one; flatten them down with a fork and press an almond into the top of each one.
    4. Bake biscuits in preheated oven for 20 minutes; cool on a wire rack.
