Cauliflower cheese pasta

    I love the taste of cauliflower cheese but wanted to create it as a main dish rather than as a side so I added pasta!

    Serves: 4 

    • 450g pasta shells
    • 400g cauliflower, finely chopped
    • 250g creme fraiche
    • 225g mature Cheddar cheese, grated
    • 115g Parmesan cheese, grated
    • salt and pepper, to taste
    • freshly chopped parsley
    • toasted breadcrumbs, to garnish

    1. Cook pasta according to the instructions on the packet; add cauliflower for the last 5 minutes. Drain, reserving the cooking liquid.
    2. Warm creme fraiche in a saucepan over very low heat; add grated cheese and stir until melted. Season to taste with salt and pepper; stir in pasta, cauliflower and parsley. Serve topped with toasted breadcrumbs.
