I love the taste of cauliflower cheese but wanted to create it as a main dish rather than as a side so I added pasta!

450g pasta shells
400g cauliflower, finely chopped
250g creme fraiche
225g mature Cheddar cheese, grated
115g Parmesan cheese, grated
salt and pepper, to taste
freshly chopped parsley
toasted breadcrumbs, to garnish

Cook pasta according to the instructions on the packet; add cauliflower for the last 5 minutes. Drain, reserving the cooking liquid.
Warm creme fraiche in a saucepan over very low heat; add grated cheese and stir until melted. Season to taste with salt and pepper; stir in pasta, cauliflower and parsley. Serve topped with toasted breadcrumbs.
