Gluten free profiteroles

    This is an easy and delicious recipe for homemade gluten free profiteroles. Simply fill with whipped cream when they are cool and dust with icing sugar.

    Makes: 10 - 15 profiteroles

    • 150g water
    • 75g butter
    • 75g gluten free flour
    • pinch of salt
    • 1 teaspoon of gluten free baking powder
    • 3 medium eggs
    • 200ml whipped cream, for filling

    1. Preheat oven to 220 C / Gas 7. Line baking trays with baking paper.
    2. Pour water into a saucepan; add butter and stir over low heat until dissolved.
    3. Add flour, a pinch of salt and 1 teaspoon of baking powder; mix well with a wooden spoon until the mixture forms a ball.
    4. Add the eggs one at a time, beating well after each one, until smooth and glossy.
    5. Spoon mixture into a piping bag; pipe out 5cm mounds of dough on prepared trays, leaving some space between each one.
    6. Bake the profiteroles in preheated oven for 20 to 25 minutes until golden brown and cooked through. Cool profiteroles on tray for a few minutes; transfer onto a wire rack to cool completely.
    7. Spoon whipped cream into a piping bag; prick a hole at the bottom of each profiterole and fill with whipped cream.
    8. Arrange profiteroles on a serving plate; dust with icing sugar and serve!
