Caramel macchiato cheesecake

    I work in a coffee shop and my favourite coffee drink is a caramel macchiato - so I created a caramel macchiato cheesecake!

    Serves: 12 

    • 175g (6 oz) digestives, crushed
    • 115g (4 oz) butter, melted
    • 50g (2 oz) caster sugar
    • 600g soft cheese, such as Philadelphia
    • 200g caster sugar
    • 3 organic eggs
    • 200ml soured cream or marscapone
    • 60ml or 4 tablespoons brewed espresso or strong coffee
    • 2 teaspoons vanilla extract
    • For serving
    • whipped cream
    • dulce de leche or thick toffee sauce

    1. Preheat the oven to 180 C / Gas mark 4. Butter a 23cm loose-bottomed cake tin. Line it with baking parchment to make it much easier to remove.
    2. Mix together the crushed digestives, melted butter and 2 tablespoons of sugar until well combined.
    3. Transfer the biscuit mixture into the cake tin and pat down until it is evenly spread. Bake in preheated oven for 8 minutes, then remove and set aside to cool.
    4. Reduce the oven temperature to 160 C / Gas mark 3.
    5. Beat the soft cream cheese in a large bowl with a hand-held electric mixer until fluffy. Gradually add the sugar, beating well until mixed.
    6. Add eggs one at a time, beating well after each addition. Stir in the soured cream or marscapone, espresso and vanilla. Pour mixture onto the baked and cooled biscuit base.
    7. Bake cheesecake in the preheated oven for 1 hour and 5 minutes; then turn the oven off, partially open the door and allow the cheesecake to rest for 15 minutes more. Remove from the oven and run a knife around the edges. Cool cheesecake on a wire cooling rack to room temperature, then cover with cling film and chill for 8 hours.
    8. To serve, cut the cheesecake into wedges and garnish each slice with whipped cream and toffee sauce.

    Used different ingredients. this is my first review, and my first attempt at making a cheesecake. i used extra light cream cheese,and light digestive biscuits. i also grated a little chocolate on top of the cheesecake. i have to thank my aunt paula, as she gave me advice about using a water bath. i love coffee, and we all adore cheesecake, and we love this one! thanks for a lovely recipe.  -  21 Jul 2008


    Something else. This was absolutely delicious! I wouldn't change a thing, but I did only have a 20cm springform tin and the cake still turned out perfectly. I will definitely make this one again!  -  21 Jul 2008


    Used different ingredients. I made this for a dinner party and instead of caramel sauce I made a chocolate sauce by melting chocolate in equal amount of warmed cream and added about a tablespoon of made coffee.  -  09 Jun 2010
