Mussels with sherry, garlic and herbs

    A Spanish-style dish of steamed mussels flavoured with sherry, garlic, parsley and chives. Serve with crusty bread or hot French fries.

    Serves: 4 

    • 1 tablespoon olive oil
    • 2 cloves garlic, chopped
    • 200ml dry sherry
    • 2kg fresh mussels, cleaned and debearded
    • 1 tablespoon finely chopped flat leaf parsley, divided
    • 1 tablespoon finely chopped chives

    1. Heat oil in a large pan over medium low heat; add garlic and stir until fragrant, about 30 seconds. Add sherry, mussels and some of the fresh parsley. Cover and steam until mussels open, about 3 minutes; discard any mussels that do not open.
    2. Pour mussels and sauce into a deep platter; sprinkle chives and the remaining parsley on top and serve immediately.
