Rich tomato soup

    This easy recipe proves that you can make a rich tomato soup at any time of the year using tinned tomatoes, onion and vegetable stock granules. Double the recipe, if needed. It is quite a thick soup which you can thin down with water or stock, if you prefer.

    Ingredients
    Serves: 1 

    • 3 tablespoons olive oil
    • 1 (400g) tin chopped tomatoes
    • 1/2 onion, chopped
    • 1 teaspoons of vegetable stock granules, or to taste
    • 1/2 teaspoon of sugar, or to taste

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat oil in a saucepan over medium heat; add onion and cook until softened, about 2 or 3 minutes.
    2. Add tinned tomatoes and simmer for 4 or 5 minutes; use an immersion blender to puree the soup until thick.
    3. Stir in stock granules and season to taste with sugar.
