This creamy green-coloured salad dressing is made from spring onions, basil, garlic, anchovy paste, mayonnaise and soured cream. It tastes delicious served with mixed green salad leaves and hard boiled eggs.

Makes: 250 ml dressing
3 or 4 spring onions, roughly chopped
2 cloves garlic, peeled
2 or 3 tablespoons roughly chopped basil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon anchovy paste
1 lemon, juiced
120ml soured cream

First mix all dry ingredients in the food processor. Then add the wet ingredients (except the sour cream), and pulse. Finally add the sour cream and mix until everything is creamy. Serve immediately or put the dressing covered in the fridge.
Place spring onions, garlic and basil in the bowl of a food processor; pulse a few times. Add salt, pepper, anchovy paste, lemon juice and mayonnaise; blend until smooth.
Transfer into a bowl and stir in soured cream; check seasoning. Serve or cover and chill the dressing for up to 2 days.
