Pumpkin, cinnamon and raisin loaf cake

    Makes: 1 loaf cake

    • 160g soft brown caster sugar
    • 4 eggs, separated
    • 200g grated pumpkin
    • 1 lemon, zested and juiced
    • 100g raisins
    • 100g ground almonds
    • 200g self raising flour
    • 1/2 teaspoon salt
    • 1 teaspoon cinnamon, or to taste
    • 1/2 teaspoon ground nutmeg, or to taste

    1. Preheat oven to 180 C / Gas 4; lightly grease and flour a loaf cake tin.
    2. Beat sugar and egg yolks together in a bowl with an electric mixer until lighter in colour, about 3 minutes. Stir in grated pumpkin, lemon juice, lemon zest, raisins and ground almonds; add flour, salt, cinnamon and nutmeg and stir to combine.
    3. Whip egg whites in a clean bowl until stiff peaks form; fold egg whites into cake mixture.
    4. Pour cake mixture into prepared loaf tin; bake in preheated oven for 1 hour or until a skewer inserted into the centre of the loaf cake comes out clean.
    5. Cool cake in tin for 5 minutes before turning out onto a wire rack to cool completely.
