A deliciously rich, moist loaf cake made with grated pumpkin, ground almonds, cinnamon and raisins.

Makes: 1 loaf cake
160g soft brown caster sugar
4 eggs, separated
200g grated pumpkin
1 lemon, zested and juiced
100g ground almonds
200g self raising flour
1/2 teaspoon salt
1 teaspoon cinnamon, or to taste
1/2 teaspoon ground nutmeg, or to taste

Preheat oven to 180 C / Gas 4; lightly grease and flour a loaf cake tin.
Beat sugar and egg yolks together in a bowl with an electric mixer until lighter in colour, about 3 minutes. Stir in grated pumpkin, lemon juice, lemon zest, raisins and ground almonds; add flour, salt, cinnamon and nutmeg and stir to combine.
Whip egg whites in a clean bowl until stiff peaks form; fold egg whites into cake mixture.
Pour cake mixture into prepared loaf tin; bake in preheated oven for 1 hour or until a skewer inserted into the centre of the loaf cake comes out clean.
Cool cake in tin for 5 minutes before turning out onto a wire rack to cool completely.
