Frittata al lardo (Frittata with smoked lard)

    This is a hearty frittata with lardo affumicato, which you can substitute with unsmoked streaky bacon.

    Serves: 2 

    • 80g lardo affumicato or unsmoked streaky bacon
    • 4 eggs
    • 1 tablespoon double cream
    • 1 tablespoon grated cheese
    • 1 knob butter

    1. Cut the lard into small cubes. Add to a a pan over low heat and fry till they draw fat.
    2. Remove from the pan and cool. Beat eggs and add fried lard and cheese.
    3. Wipe pan to remove excess fat. Add butter and let it melt. Pour in egg mixture and cook over low to medium heat till eggs are just set.
