Frittata al lardo (Frittata with smoked lard)

This is a hearty frittata with lardo affumicato, which you can substitute with unsmoked streaky bacon.

- 80g lardo affumicato or unsmoked streaky bacon
- 4 eggs
- 1 tablespoon double cream
- 1 tablespoon grated cheese
- 1 knob butter

- Cut the lard into small cubes. Add to a a pan over low heat and fry till they draw fat.
- Remove from the pan and cool. Beat eggs and add fried lard and cheese.
- Wipe pan to remove excess fat. Add butter and let it melt. Pour in egg mixture and cook over low to medium heat till eggs are just set.
