Romaine lettuce with gorgonzola dressing

    This northern Italian green salad is served with rustic black bread and dark beer.

    Serves: 4 

    • 500g Romaine lettuce hearts
    • 60g gorgonzola
    • 100ml single cream
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon vinegar
    • 1 teaspoon minced chervil
    • salt and pepper

    1. Cut the lettuce hearts into 4 lengthwise and arrange them in a salad bowl.
    2. Mash the gorgonzola with a fork and mix the cream. Add the oil and whisk till thickened
    3. Add vinegar and chervil and season with salt and pepper. Drizzle over lettuce and serve.
