Rosemary fried potatoes

    The trick to perfectly golden brown fried potatoes is to pre cook them first in boiling water.

    Serves: 4 

    • salt
    • 6 to 8 large potatoes
    • 5 tablespoons extra virgin olive oil
    • 2 sprigs rosemary

    1. Fill a large pot with 4L water and add a few pinches of salt. Wash the potatoes and add them to the pot.
    2. Bring to the boil and cook the potatoes for 15 minutes depending on size, you should be just able to pierce them with a sharp knife. Drain and let cool slightly then remove skins and cut into thin slices.
    3. In a large pan over high heat, add 5 tablespoons oil and 2 pinches of salt.
    4. Fry potatoes till golden brown on one side. Add more oil and salt if necessary. Add the rosemary and continue cooking until both sides are golden brown.
    5. Degrease on kitchen towel.
