Pizza quattro formaggi (Pizza with four cheeses)

    Italian four cheese pizza is made with mozzarella, gorgonzola, ricotta and Parmesan cheese.

    Makes: 2 pizze

    • 500g strong white bread flour
    • 1 teaspoon salt
    • 1 (8g) sachet dried active yeast
    • 200 to 300ml water
    • 700ml passata
    • 2 tablespoons extra virgin olive oil
    • 200g mozzarella, cut into 1cm slices
    • 200g strong gorgonzola, cut into 1cm slices
    • 220g ricotta
    • 80g grated Parmesan cheese

    1. Add flour to a mixing bowl. In another small bowl mix yeast and half of the water and leave to sit for a few minutes till it foams or looks creamy.
    2. Add yeast mixture to flour with the remaining water and knead till soft and elastic. Cover the bowl and leave to rise in a warm place for 2 hours.
    3. Preheat the oven to 250 C / Gas 9.
    4. Mix passata with 4 tablespoons oil and salt to taste.
    5. Grease and flour the baking tray. Roll out the dough on the baking tray to a circle of of about 30cm .
    6. Evenly spread it with passata and then cover it with the slices of mozzarella, gorgonzola and finally the ricotta.
    7. Bake till browned and bubbly, about 15 minutes. Remove from oven and sprinkle Parmesan.
