120ml extra virgin olive oil
3 tablespoons freshly chopped parsley
1kg leftover boiled potatoes, cubed
2 tablespoons white wine vinegar

Heat oil in a large pan over medium heat. Add parsley and potato cubes; stir and cook for 2 to 3 minutes. Add vinegar and toss pan to mix everything together; serve.
