Italian potato salad

    Leftover boiled potatoes are cubed and pan fried in olive oil with fresh parsley, then tossed in vinegar to create this simple but delicious Italian-style potato salad.

    Serves: 4 

    • 120ml extra virgin olive oil
    • 3 tablespoons freshly chopped parsley
    • 1kg leftover boiled potatoes, cubed
    • 2 tablespoons white wine vinegar

    Method

    1. Heat oil in a large pan over medium heat. Add parsley and potato cubes; stir and cook for 2 to 3 minutes. Add vinegar and toss pan to mix everything together; serve.
