Chargrilled aubergine salad

    Slices of aubergine are chargrilled on a barbecue, then dipped in a garlic, chilli, parsley and mint vinaigrette. Delicious as a side dish or to serve with a selection of other salads.

    Ingredients
    Serves: 4 

    • 3 aubergines, sliced into 1/2cm rounds
    • 1 teaspoon salt, or to taste
    • Vinaigrette
    • 100ml extra virgin olive oil
    • 2 tablespoons balsamic vinegar
    • 2 cloves garlic, finely chopped
    • 1/2 red chilli pepper, finely chopped
    • 1 tablespoon freshly chopped parsley
    • 2 tablespoons freshly chopped mint

    1. Preheat a barbecue to medium high heat; lightly grease grilling plate.
    2. Lightly salt aubergine slices; arrange on preheated barbecue and cook until charred on both sides.
    3. Whisk olive oil, balsamic vinegar, finely chopped garlic, chilli pepper, parsley and mint together in a bowl until well mixed; season to taste with salt.
    4. Dip each chargrilled aubergine slice into the vinaigrette and arrange them on a serving plate; serve immediately or leave to marinate for a few hours in a cool place.
