Borlotti bean and barley soup

    This rustic Italian soup made with onion, garlic, pearl barley and borlotti beans will warm the soul on a cold winter day!

    Serves: 4 

    • 6 tablespoons extra virgin olive oil
    • 1 onion, finely chopped
    • 1 clove garlic, finely chopped
    • 100g pearl barley, well rinsed
    • 750ml vegetable stock
    • 1 (400g) tin borlotti beans, rinsed and drained
    • salt and pepper, to taste
    • 1 tablespoon freshly chopped parsley

    1. Heat oil in a soup pot over medium heat; stir in onion and cook until softened, about 2 or 3 minutes. Add garlic and barley and stir to coat in oil; add stock and simmer for 45 to 50 minutes.
    2. Add drained borlotti beans; simmer for 10 minutes or until heated through.
    3. Season soup with salt and pepper; stir in freshly chopped parsley and serve.
