Penne with eggs and ricotta

    A rich, filling, and easy pasta dish, great for kids.

    Serves: 4 

    • 400g penne
    • 2 egg yolks
    • 200ml double cream
    • 250g ricotta
    • 50g butter
    • sale and pepper
    • 50g grated Parmesan cheese

    1. Cook pasta till al dente. Drain and return to the pot.
    2. Pour cream into a small bowl and place in the microwave for a few seconds to warm it up.
    3. Beat egg yolks and toss with the hot pasta.
    4. Add cream, ricotta, butter, salt, pepper and Parmesan and toss till evenly combined.
    5. Serve pasta while still steaming hot.
