Roast peppers with capers and olives

    In this Italian recipe, thin slices of yellow and red peppers are roasted with garlic, capers and olives. I love to add breadcrumbs for some crunch.

    Serves: 4 

    • 4 yellow or red peppers, thinly sliced
    • 2 garlic cloves, finely chopped
    • 4 tablespoons extra virgin olive oil
    • 2 tablespoons capers
    • 2 tablespoons pitted black olives
    • 4 tablespoons breadcrumbs
    • salt, to taste

    1. Preheat oven to 180 C / Gas 4.
    2. Place peppers and garlic in a bowl; drizzle olive oil on top and toss well. Season with salt and transfer to a baking tray; roast in preheated oven for 30 minutes.
    3. Add capers and black olives; mix well. Sprinkle breadcrumbs on top and continue roasting for another 10 minutes or until breadcrumbs have crisped up.
