About this recipe:This is a chocolate cake with a gooey chocolate centre and a nice icing. It's extremely simple to make, but results in one of the most heavenly chocolate cakes you'll ever eat!
150g (5 oz) caster sugar
90g (3 oz) butter, softened
3 organic eggs, well beaten
50g (2 oz) cocoa powder or drinking chocolate
2 dessertspoons milk
110g (4 oz) self raising flour
200g (7 oz) icing sugar
25g (1 oz) cocoa powder
3 tablespoons unsalted butter
2 tablespoons warm milk
3 tablespoons of extra thick cream

Preheat the oven to 180 C / Gas 4.
In a large bowl, mix the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the cocoa and milk. Mix in the self-raising flour just until blended. Turn into the prepared cake tin.
Bake in the preheated oven until a tester comes out clean, about 40 minutes. Cool to room temperature before removing from the tin.
To make the icing: beat the icing sugar, cocoa and butter in a medium bowl until smooth. Gradually mix in the warm milk and extra thick cream and beat until smooth.
Slice the cake in half horizontally, then fill the centre with icing and top with the other half of the cake. Cover the top and sides with remaining icing.
just made the cake preperation was quick and simple, only took me 25 minutes to cook on 180 degrees really enjoyed sharing with the girlies all loved it, used granulated sugar instead of caster but ended up yummy all the same - 22 Mar 2012
The flavour is nice but its definitely not gooey. I made it twice and both times the cake turned out dry. Also 40 mins is way too long, check it at 30 mins. I wouldn't make the cake again but i would make the icing. - 29 Jan 2011
