    About this recipe: Peanuts add a wonderful texture to the salad, while the chilli pepper adds a touch of heat!

    Serves: 4 

    • 220g grated carrots
    • 75g chopped salted peanuts
    • 3 tablespoons lemon juice
    • 1/2 teaspoon salt
    • 1 teaspoon sugar
    • 1 green chilli pepper, seeded and diced
    • 2 tablespoons finely chopped fresh coriander

    1. In a medium serving bowl, toss together the carrots and peanuts.
    2. In a separate bowl or jug, whisk together the lemon juice, salt, sugar, chilli pepper and fresh coriander. Pour the dressing over the carrots and stir gently to coat. Serve immediately.
