About this recipe:
Peanuts add a wonderful texture to the salad, while the chilli pepper adds a touch of heat!
220g grated carrots
75g chopped salted peanuts
3 tablespoons lemon juice
1/2 teaspoon salt
1 teaspoon sugar
1 green chilli pepper, seeded and diced
2 tablespoons finely chopped fresh coriander
- In a medium serving bowl, toss together the carrots and peanuts.
- In a separate bowl or jug, whisk together the lemon juice, salt, sugar, chilli pepper and fresh coriander. Pour the dressing over the carrots and stir gently to coat. Serve immediately.
