Courgette and Boursin® tart

    For this courgette tart, it's important to slice the courgettes very thinly and drain them to prevent the topping from getting soggy.

    Serves: 4 

    • 2 courgettes
    • salt
    • 1 (375g) packet ready rolled puff pastry
    • 150g Boursin®
    • pepper
    • 1 lemon, zested (optional)
    • 2 tablespoons olive oil

    1. Slice courgettes thinly with a mandoline or a knife. Place in a sieve and sprinkle generously with salt. Let them drain for 15 to 30 minutes and pat dry with kitchen paper.
    2. Preheat oven to 180 C / Gas 4. Line a baking tray with greaseproof paper and place the puff pastry on top.
    3. Prick pastry several times with a fork and spread with Boursin. Cover with courgette slices concentric circles. Sprinkle with pepper and lemon zest and brush with olive oil. Bake in the preheated oven for 20 to 25 minutes.
