Uplands Biscuits

    Similar to Viennese biscuits, these are made with a small amount of custard powder to add extra richness. Try sandwiching two together with jam or a buttercream icing.

    • 225g (8 oz) butter
    • 150g (5 oz) sugar
    • 1 large egg
    • 300g (10 oz) self raising flour
    • 50g (2 oz) custard powder
    • 1 pinch of salt
    • For serving
    • Jam and/or buttercream icing for filling

    1. Preheat the oven to 175 degrees C (Gas Mark 4).
    2. Beat butter with sugar in a large bowl until very soft. Mix in the eggs, and then stir in the flour, custard powder and salt. Then either pipe onto tray or roll out and cut out circles. Place biscuits onto a baking tray.
    3. Bake in the preheated oven for 10 minutes. Remove from the baking tray and allow cooling on cooling rack. Sandwich cooled biscuits together with a small amount of jam or buttercream. Dust finished biscuits with icing sugar.

    Altered ingredient amounts. added a little more flour as dough was very sticky, too sticky to roll out and cut with biscuit cutter.  -  07 Jun 2009


    Very nice biscuits, nice eaten slightly warm with a cuppa! watch base of biscuits when cooking as the can burn easily. I used to make these with my Mum when I was little so it was a nostalgic recipe, and a graet one to do with kids using different shaped cutters  -  07 Jun 2009
