Calamari con pomodoro (Squid in tomato sauce)

    An Italian recipe for calamari in tomato sauce that requires very little attention other than stirring while it's gently simmering. Be sure to have enough bread to mop up the sauce.

    Serves: 4 

    • 200ml olive oil
    • 500g ready to cook squid, cut into pieces or rings
    • 500g onion, minced
    • 2 bay leaves (optional)
    • 2 garlic cloves, minced
    • salt and pepper
    • 1 large (800g) tin peeled plum tomatoes, drained
    • 1 tablespoon freshly squeezed lemon juice

    1. Heat half of the oil in a heavy frying pan and fry squid till golden.
    2. In a second frying pan heat the remaining oil and slowly fry onions till lightly coloured, stirring often.
    3. Add onions to the squid. Add bay leaves, garlic, salt and pepper. Cover and simmer for 1 hour over low heat, stirring regularly.
    4. Add the tomatoes and more seasoning to taste. Simmer for 1 further hour.
    5. Add lemon juice and serve with fresh, crusty bread.
