Steak au bleu (Steak with blue cheese)

    Steak topped with a slice of blue cheese and fried potatoes on the side is a French bistro classic.

    Ingredients
    Serves: 2 

    • 100ml oil
    • 30g butter
    • 2 large potatoes, peeled and cut into sticks
    • 2 steaks
    • salt and pepper
    • 2 slices blue cheese

    Method

    1. Heat oil and 2/3 of the butter in a frying pan and fry potatoes over low to medium heat without stirring until golden, about 25 minutes.
    2. Season the steaks with salt and pepper. In another frying pan heat the rest of the butter and fry the steaks for 3 minutes per side, or until they have the desired doneness.
    3. Place a slice of blue cheese on each steak and serve with the potatoes.
