Salmon asparagus pasta

    I like to make this pasta dish with fresh tagliatelle but it's delicious with any other pasta as well.

    Serves: 4 

    • 250g asparagus, trimmed
    • 350g fresh tagliatelle
    • 1 vegetable stock cube
    • 1 knob butter
    • 1 onion, minced
    • 200ml creme fraiche
    • 250g smoked salmon, chopped
    • salt and pepper

    1. Cut asparagus into bite size pieces and steam till they can be pierced with a knife, about 7 minutes.
    2. Cook pasta according to packet instructions but add a vegetable stock cube to the cooking water.
    3. Heat butter in a large frying pan and fry onion till soft, about 3 minutes.
    4. Drain pasta and add to pan with crème fraîche, asparagus and salmon. Reheat over very low heat for 3 to 4 minutes.
