Fresh tagliatelle with salmon

    Fresh egg tagliatelle cook much faster than dry pasta which makes this quick dinner even quicker

    Serves: 4 

    • 1 (500g) packet fresh egg tagliatelle
    • 1 tablespoon olive oil
    • 1 garlic clove, minced
    • 2 tomatoes, diced
    • 2 sprigs basil, minced
    • 2 slices smoked salmon, chopped
    • salt and pepper

    1. Cook tagliatelle following packet instructions.
    2. Heat oil in a frying pan and fry garlic for 1 minute, stirring. Add tomatoes and basil and cook over low heat for a further 2 to 3 minutes.
    3. Drain pasta and return to pot, Toss with contents of the pan and salmon and reheat over low heat for 3 minutes. Season with salt and pepper and serve.
