I always make my own vanilla sugar as I think it has a much better flavour and aroma. It's very easy to do and lovely to give as a gift!

Ingredients
Makes: 150 g vanilla sugar
- 1 vanilla pod, sliced lengthwise
- 250g caster sugar

- Pour the sugar into an clean jar that has a tight-fitting lid; add vanilla pod and close jar tightly. Set aside for 1 to 2 weeks in a cool dark cupboard before using.
