Spiced chicken and vegetable couscous salad

    A delicious recipe for a chicken and vegetable couscous salad that's flavoured with red peppers, raisins, ras el hanout, feta and mint.

    Serves: 4 

    • 250g couscous
    • 2 tablespoons olive oil
    • 1 onion, finely chopped
    • 300g skinless, boneless chicken breasts, cubed
    • 2 tablespoons ras el hanout, divided
    • 1 red pepper, chopped
    • 1 courgette, cubed
    • 1 aubergine, cubed
    • 200g feta cheese, cubed
    • 2 tablespoons raisins
    • 2 tablespoons freshly chopped coriander or mint
    • mixed salad leaves

    1. Cook the couscous according to the instructions on the packet; fluff with a fork.
    2. Heat olive oil in a wide frying pan over medium heat; add onion and cook for 1 or 2 minutes. Stir in chicken and cook until browned; season with 1 tablespoon ras el hanout.
    3. Add red pepper, aubergine and courgette; cook and stir for a few minutes or until chicken is cooked through.
    4. Add couscous and raisins to the pan; mix well and season with remaining tablespoon of ras el hanout.
    5. Just before serving, stir in feta cheese and garnish with freshly chopped coriander or mint.
