I have perfected my pancake recipe over the years, so much so, my friends and family request 'Oscar's pancakes'! It's a very versatile recipe - you can add sliced strawberries or blueberries to the batter if you like.

Makes: 12 pancakes
1 tablespoon caster sugar
pinch of salt
1 tablespoon cinnamon
1 tablespoon baking powder
225g self-raising flour
4 eggs, separated
2 drops vanilla extract

Place sugar, salt, cinnamon, baking powder and flour in a mixing bowl. Whisk egg yolks and milk together in a bowl; make a well in the flour and stir in egg yolk mixture until smooth.
Beat egg whites until stiff peaks form; fold into pancake batter.
Melt butter in a wide frying pan over medium low heat; spoon 3 mounds of pancake batter into the pan and cook until bubbles appear on the surface. Flip pancakes over and cook until golden brown on other side; repeat with remaining batter.
