Tarte au pommes alsacienne (Alsatian apple pie)

    Alsatian apple pie is easy to make, especially if you use ready rolled shortcrust pastry. Serve with vanilla ice cream or whipped cream.

    • 1 ready rolled shortcrust pastry
    • 2 to 3 apples, such as Golden Delicious
    • 5 eggs
    • 3 tablespoons sugar, to taste
    • 1 tablespoon vanilla extract
    • 250ml double cream

    1. Preheat the oven to 180 C / Gas 4.
    2. Unroll the shortcrust pastry on a greased tart tin.
    3. Peel and core the apples, cut them into thin slices and place them on the pastry in a decorative pattern.
    4. Whisk the eggs and the sugar then incorporate the vanilla and the cream. Pour over the apples and bake till the pie is browned, about 45 minutes.
