Fluffy pancakes with vinegar

    Buttermilk pancakes are especially fluffy. If you don't have buttermilk, use milk and vinegar as a substitute, it's like homemade buttermilk and it has the same effect.

    Serves: 4 

    • 200ml milk
    • 2 tablespoons distilled white vinegar
    • 150g plain flour
    • 1 1/3 teaspoons baking powder
    • 2 tablespoons caster sugar
    • 2 tablespoons melted butter
    • 1 egg

    1. In a bowl mix vinegar and milk and wait till the milk starts to thicken, at least 5 minutes.
    2. In the meantime, mix flour, baking powder and sugar in a bowl. In a separate bowl stir butter and egg and add to flour mixture. Whisk well till free of lumps.
    3. Grease a non stick frying pan and ladle pancakes into pan. Cook till bubbles form and browned on the bottom side, then flip and cook from the other side till lightly browned.


    You can also use wholemeal flour which absorbs more liquid so you need to add more milk to make a liquid batter. The batters should be liquid enough to coat a cooking spoon.
