1 (10cm) piece fresh root ginger
honey to taste

Peel and thinly slice ginger. Add ginger and water to a saucepan and bring to the boil. Cover and simmer for 5 minutes. Taste and boil for up to 5 further minutes depending on how strong you like the tea.
Pour through a strainer and sweeten with honey if desired. Drink whilst hot.
