Banana chocolate chip bread

    The first time I made this banana bread, it was to use up a tub of cream. It was so good that I have been recreating the recipe ever since.

    Makes: 1 banana bread

    • 300ml double cream
    • 120g caster sugar
    • 2 eggs
    • 2 large ripe bananas, mashed
    • 300g plain flour
    • 1 pinch salt
    • 1 1/4 teaspoons baking powder
    • 100g dark chocolate chips or chopped chocolate

    1. Preheat oven to 180 C / Gas 4.
    2. In a bowl beat sugar and cream till fluffy then stir in eggs, banana, flour and salt till smooth. Fold in chocolate.
    3. Tip into a well grease loaf tin and bake till a tester comes out clean, about 40 minutes. Let cool slightly, then unmould and cool fully before slicing.
