Walnut chocolate loaf cake

    A very easy and quick loaf cake. Chocolate icing is optional.

    Makes: 1 loaf cake

    • 50g plain chocolate, grated
    • 125g ground walnuts
    • 200g butter, at room temperature
    • 125g caster sugar
    • 1 pinch salt
    • 2 teaspoons vanilla sugar
    • 4 eggs
    • 250g plain flour or spelt flour, sifted
    • 3 teaspoons baking powder
    • 1/2 teaspoon cinnamon
    • chocolate icing (optional)
    • 2 tablespons chopped walnuts (optional)

    1. Preheat oven to 180 C / Gas 4. Grease a loaf tin.
    2. Beat butter till creamy while gradually adding sugar. Add salt and vanilla sugar and stir well. Add eggs one after the other and stir 30 seconds after each addition. Stir in walnuts and chocolate.
    3. In a bowl sift, flour, baking powder and cinnamon and add to egg mixture. Stir well to combine.
    4. Tip mixture into prepared tin and bake in the preheated oven for 1 hour. Unmould and let cool on a wire rack.
    5. If desired, cover with chocolate icing and sprinkle iwth chopped walnuts.
