Obatzda (Bavarian cheese spread)

    To make this classic German spread, the soft cheese (camembert or brie) needs to be very ripe. It is best when served the same day.

    Serves: 4 

    • 250g very ripe camembert, at room temperature
    • 40g butter, at room temperature
    • 1/2 small onion, minced
    • paprika to taste
    • 1 pinch ground caraway

    1. Mash camembert with a fork.
    2. Stir butter till creamy. Add camembert and onion and stir till combined.
    3. Season with paprika and caraway. If you don't serve it right away, refrigerate it but let it come to room temperature before serving.
