Scrambled eggs with wild garlic

    Wild garlic makes a fabulous addition to scrambled eggs for a hearty breakfast or brunch. If you are a vegetarian, omit the pancetta.

    Serves: 4 

    • 2 slices pancetta or bacon, chopped
    • 4 eggs
    • 4 tablepsoons milk
    • 1 bunch wild garlic, washed, dried and minced

    1. Fry pancetta in a non adhesive frying pan till crispy. Remove from pan and place on kitchen towel to degrease. Pour off most of the fat from the pan.
    2. In a bowl beat eggs with milk.
    3. Slowly pour eggs into pan and let set, then scramble and break up with a wooden spoon. Add pancetta and wild garlic and toss. Serve at once.
